Our story
Coffee is the most-served drink on most menus and the least talked about. We started Single Origin Microlot to change that, one Guatemala harvest at a time.
Coffee this good should be easy to serve.
Guatemala grows coffee with real character: volcanic soil, high elevation, and farms that treat picking day like a craft. Somewhere between that farm and a busy dining room, most of that character gets lost. Closing that gap is the whole reason we exist.
So we keep the hard parts on our side of the counter. You get coffee chosen for how it tastes, roasted on a schedule you can plan a menu around, and a sourcing story you can repeat to a guest without crossing your fingers.
We are small by design. The person who answers your call is the person who knows your roast profile, your delivery week, and your busiest shift.
Trusted Guatemala partnerships. Small-batch roasting in Dallas.
We source through sustainable partnerships with Guatemala producers and importers, choosing lots for cup quality, process clarity, and the consistency a wholesale program lives on. If a lot is not good enough for your menu, it does not make our list.
Roasting happens here in Dallas in small batches through our partnership with Tweed Coffee (Roasting Den, 1355 Motor Circle). Coffee is typically roasted Monday through Wednesday and ships Thursday and Friday, and we guarantee a roast date within 7 days of shipping.
Coffees are selected for specialty quality - consistently in the ~85+ range on the SCA scale. Lots are evaluated using Specialty Coffee Association and Coffee Quality Institute standards, and when a specific lot score is available, we share it with buyers.
Close enough to care.
We are based in Dallas, so cafes and restaurants across Dallas - Fort Worth and Austin get us at our best: samples in your hands quickly, a real person on the phone, and coffee that lands when your week needs it. We ship nationwide when the fit is right.
Guatemala only: Lake Atitlan, Huehuetenango, Antigua. Depth beats a rotating map of the world.
Roasted within 7 days of shipping, week after week, so your bar tastes the same on a Tuesday as it did at the tasting.
Where we are headed
We are working toward direct green import so we can stand even closer to the farms behind each lot: more traceability, longer relationships, and better coffee in the cup. Until that is real, we will say exactly what we are - a Dallas company sourcing Guatemala coffee through partners we trust.
That is the short version. The longer version usually happens over a cupping table, and you are welcome at it.
